Brown Rice Dosa



Brown rice is partially milled rice. The complete milling and polishing of brown rice converts it into white rice. It is rich in fiber and much more nutritious than white rice.


Ingredients:
1. Brown Rice - 1 cup
2. Urad dal - 1/4 cup
3. Fenugreek seeds - 1/4 tsp
4. Beaten Rice - 1 tbsp
5. Salt to taste

Method:
1. Soak rice, urad dal, fenugreek seeds and beaten rice for around 4-6 hrs.

2. Grind into smooth paste, add salt and keep it aside for 8 hrs for fermentation.

3. Make dosa and add ghee to taste. Serve hot with sambar/chutney.

Tip: Fenugreek seeds give golden brown colour to dosa.

Poha

Poha is a Maharastrian dish and a very easy to make breakfast recipe.

Ingredients:
1. Thick beaten rice - 1 cup
2. Onion - 1 medium sized
3. Green chillies - 2-3 nos.
4. Carrots and beans - 1/4 cup each finely chopped
5. Groundnuts - 1 tbsp
6. Cumin seeds - 1/4 tsp
7. Coriander leaves - 2 twigs
8. Curry leaves - few
9. Mustard seeds - 1/4 tsp
10. Turmeric powder - 1/4 tsp
11. Oil - 1 tsp
12. Salt to taste

Method:
1. Soak beaten rice in water for 10 mins, then drain off the water completely.

2. Heat oil in a pan and splutter mustard seeds, then add cumin seeds, ground nuts and fry until ground nuts turn golden brown.

3. Add onion, green chillies, curry leaves, carrots, beans, turmeric powder, salt to taste and fry for 5 mins on medium flame.

4. Now add soaked beaten rice, mix thoroughly. Cover and cook for 10 more mins on low flame with occasional stirring.

5. Garnish with freshly cut coriander leaves.

Easy Potato Bhaji - Kerala style


Ingredients:
1. Potatoes - 2 nos.
2. Onion - 1 small
3. Green chillies - 3 nos.
4. Ginger finely chopped - 1/2 tsp
5. Mustard seeds - 1/2 tsp
6. Curry leaves - few
7. Coconut oil - 1 tsp
8. Turmeric powder - 1/4 tsp
9. Salt to taste

Method:
1. Cut potatoes in small cubes. Pressure cook potatoes, thinly sliced onion, green chillies, ginger with salt, turmeric powder and 1 cup water for 10 mins on medium heat.

2. Heat oil in a pan, add mustard seeds, curry leaves and cooked potato mixture. Add more water to get the desired consistency. Cook for another 5 mins on low heat.

Serve hot with poori or dosa.
